My Story

Hi, I’m Pat, the founder of Oinks and Cluckers. Born and raised in New England, my journey has been anything but ordinary. Over the years, I’ve worn many hats—musician, stone mason, construction worker, landscaper, skateboarder, and cook. But cooking? That’s the one that stuck.

Cooking drew me in because it’s like art with endless layers. As someone who grew up in the punk rock hardcore scene, I didn’t like following rules, and the kitchen gave me the freedom to be myself, surrounded by others who felt the same. I’ve been cooking for over 20 years now, and my passion has taken me everywhere—from Newport, RI, where I honed my skills in coastal cuisine, to Knoxville, TN, where I learned authentic Southern cooking, to many kitchens across the country.

A huge milestone in my career was hosting a pop-up in my hometown of Canaan, CT, at a national landmark diner—the very first place I worked at 15. It was the perfect place to showcase my cooking for old friends. When I needed a name for the event, my stepfather Charlie didn’t miss a beat. He shouted, “Oinks and Cluckers!” and it stuck.

Later, that name became the heart of my food truck, where I poured my creativity into every meal. The truck was a hit, but after two years, life threw me some curveballs, and I had to close it. Still, the fire in me never went out.

In 2023, my stepfather Charlie passed away, and I knew I had to keep his memory alive. That’s when I decided 2024 would be the year to fully chase my dream. I sold my house, put everything in storage, and went all in. On November 5, 2024, Oinks and Cluckers was reborn.

This isn’t just a business—it’s a tribute to the people, places, and flavors that have shaped me.
